Wine Profile
Tasting Notes
Dark cherry hued this Cabernet Franc has aromas reminiscent of pipe tobacco and cherries. Flavors of boysenberry and mulberry carry over to the palate then drift away to reveal flavors of and young red cherry with a hint of white pepper. Velvety tannins linger on the pallet brining out slight flavors of vanilla.
Vineyard Notes
81% Cabernet Franc from Burning Daylight Vineyard Rendon, TX 13% Merlot from Bingham Family Vineyard, Meadow, TX 6% Petit Verdot from Sprayberry Vineyard, Midland, TX
Winemaker Notes
Cabernet Franc (kab-er-nay frah~n) originates in the Loire region of France but is best known as a blending grape for Bordeaux style reds. It tends to have similar flavors to Cabernet Sauvignon but is lighter in intensity and color. DNA testing has proven Cabernet Franc to be a parent grape of Cabernet Sauvignon, Merlot, and Carménère.
Food Pairing Notes
Pair with blue cheese stuffed olives, Salisbury steak and mashed potatoes, stuffed portabella mushrooms, salmon burgers or chocolate covered espresso beans.
